Easy Beef Taco Skillet 🌵🌵🌵

Tacos in a cast iron skillet! Serve this delicious, easy 30-minute beef taco skillet as ...

  • a main course

  • with shredded lettuce as a salad

  • with sides of salsa, chopped tomatoes, extra cheese, warm corn taco shells or large lettuce leaves for wrapping

For a cool appetizer, as shown here, serve with tortilla chips and top with diced tomatoes, green onion, avocado, and extra cheese right before serving.

The best part is, it's your choice! Don't eat meat? Use a layer of refried beans or vegan sausage. Add chopped jalapeño into either. When I make this, I go heavy on the garlic and black pepper, and always include a dollop of plain Greek yogurt.

Leftovers? Toss them in a wrap. I love the Habanero Lime Wraps from Trader Joe's. There are plenty of low-carb versions on Amazon, and possibly in your local grocery store. Keto? Pu it in a cheese wrap (the ones where you melt cheese into a taco shaped mold) or on top of a cheese crisp (the ones all over the internet where you bake a pile of shredded parm cheese in a round crisp shape).

If you are using this as leftovers, I recommend you use fresh avocados.

This recipe even comes with its own taco seasoning recipe.
