Spicy Mango Salsa

What to cook for dinner? Grill or bake chicken or fish, and level it up with this salsa recipe. This simple clean eat comes together with a nice blend of sweet and spicy flavors. It is delicious with tacos of any kind or grilled Atlantic cod. Leftovers make a tasty lunch over a a sweet potato or even traditional tortilla chips.


Meal Planning Tip ~ Bake up a bunch of sweet potatoes, wrap them individually in foil and freeze them. Just like that you have a fabulous lunch or side dish!

Ingredients


2 medium mangos, peeled and chopped small 1 medium red bell pepper, chopped small ½ medium red onion, diced small ½ medium jalapeño, finely minced 3 T. fresh cilantro, finely chopped

2 T. fresh lime juice Sea salt and fresh-cracked pepper, to taste


Directions


1. Combine mango, bell pepper, red onion, jalapeño, cilantro, and fresh lime juice in a medium glass or other non-reactive bowl. Season with salt and black pepper, to taste, and stir to combine. 2. Serve immediately or cover and place in the refrigerator until ready to use.
